2/11/2024 0 Comments Meso maya downtownWe chose the downtown spot for its outdoor patio with stringing lights, exposed brick, old-timey feel, and social atmosphere. Now there’s the usual hot spots I frequent to get my tex-mex fix like Bandito’s, Enchiladas, and Mi Cocina, but this was a special occasion that called for an extra special indulgence of real authentic Mexican cuisine.Īfter much deliberation, I carefully chose Meso Maya to celebrate and show off my Mexican pride. There are two locations for Meso Maya, one in the Preston Forest area and one in downtown. The most important reason being the first, as I could eat mexican food every meal of every day, sucking down a frozen margarita as I do so. Not only do I have the excuse to stuff my face with endless amount of chips and guac, but it is socially acceptable to wear my sombrero around town, bash in a couple pinatas, and shake maracas to mariachi music like I am the next Shakira. Chef Nico earned his reputation within the Dallas restaurant scene by working at Cuba Libre, The Porch, Hibiscus, and Meso Maya. By traveling from state to state throughout Mexico, Chef Nico learned many of the culinary skills that patrons in the area enjoy every day. In 1996 he left Mexico for Dallas so he could pursue his goal of becoming a renowned chef. Nico honed his skills at several restaurants throughout the country, in states such as Vera Cruz, where he learned about seafood, dried chilies, and making sauces from scratch, and Oaxaca, where he perfected tamale-making techniques. MESO MAYA’S kitchen is led by Nico Sanchez, the executive chef.Ĭhef Nico’s love for the culinary arts started at age nine, when he worked for a bakery, making deliveries and assisting in the kitchen in Mexico.
